LADY ROSE'S CHOCOLATE CHIP
MERINGUES
 
2 egg whites
1/8 tsp. salt
1 c. semi-sweet chocolate morsels
1/8 tsp. cream of tartar
3/4 c. sugar
1/2 c. chopped pecans or walnuts
1/2 tsp. vanilla extract

Beat egg whites at room temperature. Add cream of tartar and salt at high speed of an electric mixer for 1 minute. Gradually add sugar, 1 teaspoon at a time, beating until stiff peaks form and sugar dissolves (2-4 minutes). Stir in chocolate morsels, chocolate nuts and vanilla.

Drop meringue mixture by teaspoonful onto cookie sheet lined with aluminum foil. Bake at 300 degrees for 25 minutes or until dry. Cool completely on cookie sheets. Carefully peel cookies from foil. Yields 5 dozen.
