LOUISIANA PECAN CAKE 
2 c. sugar
1 c. chopped pecans
3 eggs
3/4 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. boiling water
1 c. butter
1 c. raisins
3 c. flour
1 tsp. allspice
1/2 tsp. ginger
Pinch of salt

Sift dry ingredients together. Set aside. Cream together with mixer sugar and butter. Add eggs 1 at a time and beat in. Stir nuts and raisins together and stir in 2 tablespoons of flour mixture to coat raisins. Add dry ingredients alternately with water. Beginning with dry. Mix thoroughly. Stir in nuts and raisins until blended throughout.

Grease and flour an angel food cake pan or bundt pan. Pour in batter and bake at 350 degrees for 40 minutes. Test with toothpick. Cool 10 minutes before turning out of pan. This is an old family recipe.
