MARUYANG CAMOTE 
2 eggs
1/2 c. milk
2 c. all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 lb. raw yams (or drained canned yams), grated
Cooking oil for deep frying
1/2 c. sugar

In a big bowl beat eggs. Stir in milk. Sift flour, baking powder, soda, and salt. Add to liquid mixture; mix well. Stir in yams and blend well.

In a deep fryer, heat oil to frying temperature. Drop in batter by the teaspoonful. Cook until golden brown. Drain and sprinkle with sugar before serving.
