EASY SKILLET HASH 
(A great way to use leftovers). For best results use food processor.

Finely chop 1 medium onion. Add to coarsely chopped 2-3 medium, cooked potatoes. Place in large mixing bowl. Cut up and coarsely chop 2 cups cooked beef or corned beef. Add to mixing bowl.

2 eggs
2 tbsp. catsup
1/2 tsp. salt (omit for salt-free diet)
1/8 tsp. pepper

In large skillet over medium heat, place 3 tbsp. vegetable oil. Spread mixture in skillet; fry about 5 minutes. Turn and fry another 5 minutes. Serve. Yields 4 (1 1/4) cup servings.
