MAM-MAW'S TEA CAKES 
2 eggs
1 c. sugar
3/4 c. cooking oil
1 tsp. vanilla
2 c. self-rising flour

Put all ingredients in mixing bowl; mix well and drop by teaspoonfuls on cookie sheet (greased). Bake at 425 degrees about 10 to 12 minutes. Tea cakes will harden as they cool.

Flavor was great but 425°F was way too high! I only cooked for 7 minutes and one pan of cookies completely burnt on the bottom. I was using a non stick pan. The other pan did not cook enough. So turned down to 350°F and stuck back in oven for 3 minutes. I personally think 425°F is too high for non stick or regular. Adjust your temp and keep a eye on the cookies and they should turn out fine!
