NINE BEAN SOUP 
2 c. Nine bean mix
2 qts. water
1 clove garlic, minced
1/2 to 3/4 tsp. salt (to t taste)
1 lb. ham, diced
1 onion, chopped fine
1 (16 oz.) can tomatoes, undrained and chopped
1 (10 oz.) can Rotel tomatoes undrained and chopped

Sort and wash 2 cups bean mix. Place in Dutch oven and soak overnight. Drain beans. Add 2 quarts water, ham, garlic, onion and salt. Cover and bring to a boil. Reduce heat and simmer 1 1/2 hours until beans are tender. Add both kinds of tomatoes and simmer for another 30 minutes, stirring occasionally.

Black beans
Lentils
Navy beans
Blackeyed peas
