ORANGE ROUGHY WITH TARRAGON
SAUCE
 
1 lb. orange roughy or lean fish fillets
1/4 tsp. salt
1 tbsp. lemon juice
1/8 tsp. dry tarragon
Paprika

Arrange fish in microwave dish, thickest parts to outside edges. Sprinkle with salt, lemon juice, tarragon and paprika. Cover tightly with plastic wrap.

Microwave on high 3 minutes; rotate 1/2 turn. Microwave until fish flakes with fork, another 3 minutes or so. Serve tarragon sauce on top.

SAUCE:

Mix in Pyrex measuring cup: 1/8 tsp. tarragon 1 tbsp. reduce calorie mayonnaise Dash of salt

Microwave uncovered on high 45 seconds, stirring every 15 seconds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
