ANNA'S WHOLE WHEAT RYE BREAD 
1 stick butter
2 c. scalded milk
2 eggs, beaten
1/2 c. honey or 1/2 c. sugar
1 cans (2 tbsp.) yeast
2 c. warm water
4 c. whole-wheat flour
1 c. rye flour
1 tbsp. instant mashed potatoes
7 c. white flour

Melt butter and add 2 cups scalded milk, cool. Add 2 eggs beaten, add honey or sugar and yeast dissolved in 2 cups warm water. Mix dry ingredients and add to liquids. Knead about 10 minutes until no longer sticky.

Let rise until double in size (about 1 to 2 hours). Divide and put in loaf pans, let rise to 1 inch over top of pan. Bake at 350 degrees for 35 to 45 minutes.
