WHOLE WHEAT OR RYE BREAD 
1 c. whole wheat or rye flour
2 c. unbleached white flour
1 1/4 c. lukewarm water
1 tbsp. dry yeast
2 tbsp. honey
2 tbsp. oil
1 tsp. salt, if desired

Add whole wheat or rye flour. Add white flour, make into balls. Let rise in warm place until double in size, 45-60 minutes. Punch dough down. Put in greased baking pan. Let rise again in warm place until double in size, 45-60 minutes. Bake at 350 degrees for 1 hour; cover when baking.
