MOCK LOBSTER SALAD | |
1 1/2 lbs. haddock or cod fish 1 lemon 1 onion 3 tbsp. vinegar 1/2 c. Hellmann's mayonnaise 1 c. chopped celery Put fish in pan with water to cover. Add the lemon and onion, sliced. Simmer gently until fish flakes apart easily. DON'T OVER POACH or it will break up too much. Drain and remove skin if any and search carefully for bones, the darn things. Break fish in chunks, add salt and pepper to taste, pour on vinegar and stir in mayonnaise and celery. Chill overnight in a bowl that has been well rubbed with garlic. |
