BROILED LOBSTER | |
6 African rock lobster tails softened butter Cut lobster tails down through middle of hard shell with sharp knife. Grasp tail in both hands and open flat. Spread with softened butter. Place 4-inches below the source of heat in preheated broiler. Broil 8 to 10 minutes, depending upon heat. Sauce: 1/2 c. olive or salad oil 3 tbsp. fresh lemon juice 2 tbsp. chopped fresh parsley 1 1/2 tsp. salt 1/8 tsp. ground black pepper 1 tsp. powdered mustard Combine olive or salad oil, lemon juice, parsley, salt, pepper and powdered mustard. Beat well and heat. Pour over broiled lobster tails. Serves 6. |
