PIG PICKIN CAKE 
1 white cake mix with pudding
4 eggs
1/2 c. cooking oil
1 (11 oz.) can mandarin oranges, juice and all
1 pkg. instant vanilla pudding mix
1 1/2 c. milk
1 (20 oz.) can crushed pineapple
1 (9 oz.) carton whipped topping

Combine cake mix, eggs, oil, and oranges in a large bowl. Blend on low speed for 2 minutes. Grease and flour 2 layer cake pans. Bake in oven at 350 degrees for 33 to 38 minutes.

Mix pudding mix with 1 1/2 cups milk until thick. Drain pineapple, reserving juice. Add pineapple and whipped topping to pudding. Blend.

When cake is cooled, poke holes with a toothpick, and pour reserved pineapple juice evenly over layers. Frost with the pudding mixture. Top with pecans, if desired.
