FRESH SPINACH SALAD 
1 lb. fresh spinach
1/4 c. onion, finely chopped
1/2 c. celery, finely chopped
1 1/2 tsp. cider vinegar
1/2 tsp. hot sauce
1/2 tsp. salt
3 hard-cooked eggs, finely chopped
1 c. sharp Cheddar cheese, grated
1 c. Real Mayonnaise

Wash spinach and dry thoroughly (drying important so dressing will stick) and chop finely. Mix spinach, onion, celery, eggs and cheese. Blend hot sauce and salt with vinegar. Add to spinach and toss to mix well. Fold in mayonnaise no more than 1 hour before serving.

Everything may be mixed together and held in Tupperware early on the serving day except for the mayonnaise. If you add the mayonnaise too soon it makes the salad watery.
