SUMMER CORNISH ROAST | |
3 Tyson Cornish game hens, halved 1 pt. buttermilk (2 c.) 1 c. cream of mushroom or cream of celery soup 1/4 tsp. garlic 1 tsp. basil 1 tsp. thyme 1 tsp. rosemary 1 tsp. salt 2 dashes pepper 8 oz. grated cheddar cheese New (sm.) potatoes New (sm.) onions 3 stalks celery, sliced mushrooms Place Cornish in baking dish, skin side up. Mix buttermilk, soup and garlic; set aside. Sprinkle Cornish with seasonings and cheese. Spoon sauce over all. Bake at 350 degrees, (preheated) for 45 to 60 minutes. Last 30 minutes add new potatoes, onions, celery and mushrooms. Serves 6. Arrange on platter and garnish with celery leaves. |
