MARINATED TOMATOES 
6 ripe local tomatoes, sliced
2/3 c. salad oil
1/4 c. vinegar
1/4 c. chopped parsley
1/4 c. sliced green onions
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. dried thyme (or 1 tsp. fresh)
1 clove garlic, chopped

Mix all ingredients (except tomatoes) 24 hours ahead and then pour over sliced tomatoes. Refrigerate. Drain to serve.
