BANANA CUPCAKES 
1 c. butter
1 c. sugar

1 beaten egg
1 c. mashed bananas

Sift together, then add to first mixture and beat well.

1 1/2 c. flour
1 tsp. baking soda
1/8 tsp. salt
1 tsp. vanilla

Fill greased cupcake tins 2/3 full of batter. Bake at 400 degrees for 15 to 20 minutes. Makes 14 large cupcakes. Frost with powdered sugar icing, top with chopped nuts.
