BAKED LIMAS WITH SAUSAGE | |
1 lb. dried lima beans 1 lb. pork sausage, loose or link 1 green pepper, chopped (optional) 1 med. onion, chopped 1 tsp. salt 2 tsp. sugar 4 tbsp. brown sugar 1 (10 1/2 oz.) can tomato soup 1 to 2 c. tomato juice or water (may not need juice or water) Pick over beans and wash. Cover with cold water and soak overnight. Drain and cover again with water and simmer until tender. Place beans in baking dish that can be covered. Stir ingredients through the beans carefully - saving out the sausage cakes or links to go on top. DO NOT ADD TOMATO JUICE OR WATER UNLESS THEY COOK DRY. Cover and bake at 325 degrees for 2 hours. Uncover and continue baking for 1/2 hour. |
