CHICKEN CASSEROLE 
8 pieces chicken, cooked and deboned
1 c. chopped celery
2 hard boiled eggs
3 1/2 tbsp. onions
1 sm. can water chestnuts
1 1/2 c. cooked rice
1 can cream of chicken-mushroom soup
Salt and pepper to taste
3/4 c. mayonnaise
1 c. chicken broth
2 c. Hi-Ho crackers, crushed

Mix all ingredients except crackers, together in a baking dish. Then cover with crackers and bake 45 minutes, 250 degrees.
