1/2 c. butter 1 1/2 tsp. garlic powder 1 1/2 tsp. basil leaves 1 tsp. onion powder 1/2 tsp. salt 2 lb. fresh sole fillets, cut into 12 equal pieceslg. tomato into 6 1/4 inch slices 6 (1 oz.) slices (4x3 inch) 2 inch natural Monterey Jack cheese 2 tbsp. grated Parmesan cheese In ungreased 9x13 inch baking dish, melt butter in preheated oven. Add garlic powder, basil leaves, onion powder and salt. Stir to blend. Dip both sides of sole fillets into melted seasoned butter. Set 6 sole fillets aside. Place remaining 6 fillets in same baking dish. Layer each with 1 tomato slice, 1 cheese slice. Top each cheese slice with remaining fillet. Sprinkle fillets with Parmesan cheese. Bake in center of 350 degree oven for 30 minutes until fish flakes with fork. |
