ITALIAN VEGETABLE MEDLEY 
2 c. zucchini, green or yellow, slice 1/4 inch
1 sm.onion, slice thin rings
1 tbsp. butter
1/2 tsp. lemon juice
1/4 tsp. salt
1/4 tsp. dried basil, crushed
1 tbsp. snipped parsley
1 c. cherry tomatoes, halved

In 1 1/2 quart casserole, combine all but tomatoes. Cover. Cook in microwave on high 5 minutes until zucchini is almost done. Add tomatoes and cook on high 1 minute until heated through. 4 servings. Cook time: 6 minutes - microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
