4 shucked oysters 1/2 c. mayonnaise 1/8 to 1/4 tsp. Old Bay seasoning 2 tsp. lemon juice 1 tsp. diced pimento Paprika 1 tbsp. mustard with horseradish 1/4 tsp. Worcestershire sauce 1/4 c. backfin crab meat 1 tsp. green pepper, finely diced 1 to 1 1/2 tsp. cooked ham, diced Chopped parsley Preheat oven to 350 degrees. Arrange oysters in half shell on crumbled aluminum foil in baking pan. In a bowl combine mayonnaise, mustard, seasonings, lemon juice, and Worcestershire sauce. Mix well, then remove 1/2 cup of mixture and set aside. Add crab meat, pimento, and green pepper to the remaining sauce. Spoon on top of oysters. Top with the reserved sauce and sprinkle with ham. Bake for 6 minute or until golden on top and cooked through. Garnish with paprika and parsley. Serves 1. |
