PEACH COBBLER 
4 c. fresh peaches, sliced
1/2 c. sugar
1/8 tsp. nutmeg
2 tsp. tapioca
2 tbsp. butter, melted
2 c. flour
3 tsp. baking powder
2 tbsp. sugar
1 tsp. salt
1/2 c. shortening
2 eggs, beaten
1/2 c. milk

Combine peaches, sugar, nutmeg, tapioca and melted butter in a greased 12 x 8 x 2 inch baking dish. Sift together flour, baking powder, sugar and salt. Work in shortening. Combine eggs and milk, and add to flour mixture using a fork for stirring. Spread this mixture thinly over the peaches. Sprinkle with sugar and cinnamon mixture (1/4 teaspoon cinnamon, 1 tablespoon sugar). Bake 40 minutes or until fruit is tender. Makes 6 servings. Serve warm and plain or with topping.
