BEST-EVER PEACH COBBLER | |
2-3 c. sliced peaches 2 tsp. grated lemon peel 3 tbsp. lemon juice 2 tbsp. tapioca 1 1/2 c. flour 2 tsp. baking powder 1/3 c. butter 1 egg 1/3 c. milk 3/4 c. sugar 1/2 c. water 2 tbsp. butter Place peaches in 2 quart casserole. Sprinkle with lemon peel and juice and tapioca. Mix dry ingredients with egg and milk. Spoon over peaches. Bring to boil sugar, water and 2 tablespoons butter. Pour over batter. Bake 45 minutes, 350 degrees. Good using other fruit also. |
