INDONESIAN CHICKEN 
2 breasts of skinned & boned chicken
1 sm. onion, chopped
1 stalk celery, sliced
1 clove garlic, pressed
3 tbsp. vegetable oil
3 carrots, sliced fine
1 c. broccoli flowerets
1 tbsp. peanut butter
2 tbsp. soy sauce
1/4-1/2 c. water

Cut the chicken in cubes. Heat wok or large frying pan. Then add oil. When oil is hot add chicken, onion, celery and garlic. When the chicken is seared add the carrots and broccoli.

Mix together in a small cup the sauce ingredients and add. Simmer for 15 minutes. Serve on a bed of rice. If you enjoy spicy food add your favorite hot sauce in the last 15 minutes. Tofu or temper may be substituted.
