1 (8 oz.) can pineapple chunks 1 tbsp. brown sugar 1 tbsp. cider vinegar 2 tsp. corn starch 1 tsp. soy sauce 2 to 3 drops hot pepper sauce 1/2 green pepper, cut into strips 1 lg. tomato, cut into eights 1 apple, peeled and sliced 1 med. banana, sliced Drain pineapple juice into 1-quart microwave-safe casserole; set pineapple aside. Add brown sugar, vinegar, corn starch, soy sauce, and pepper sauce to pineapple juice; mix until smooth. Microwave (high) uncovered, 3 to 4 minutes or until mixture boils and thickens, stirring once. Add green pepper, tomato, apple, banana, and pineapple. Mix lightly. Microwave (high), uncovered 2 to 3 minutes or until heated through, stirring once. This combination is also good with a dash of curry. |
