ZUCCHINI AND TOMATO CASSEROLE 
3 1/2 c. sliced squash
1 c. sliced onion
1 c. bell pepper strips
1 tsp. Italian seasoning
1/2 tsp. garlic powder
1/2 tsp. pepper
1 (16 oz.) can tomatoes, undrained and chopped

Spray a 1 1/2 quart baking dish with Pam. Make layers of zucchini, onion, and pepper strips until all are used up. Combine the seasonings and sprinkle over each layer as you place them. Pour tomatoes over casserole. Bake at 350 degrees uncovered for 1 hour.
