BROCCOLI SALAD 
SALAD:

4 c. fresh broccoli flowerets
2/3 c. golden raisins
2/3 c. sliced fresh mushrooms
1/2 c. diced red onion

DRESSING:

1 egg
1 egg yolk
1 c. sugar
1/2 tsp. dry mustard
1 1/2 tsp. cornstarch
1/4 c. red wine vinegar
1/4 c. water
1/8 tsp. salt
2 tbsp. butter
1/2 c. mayonnaise

Wash vegetables and mix in a large bowl. Add raisins and onion. Whisk egg, egg yolk, sugar, mustard and cornstarch in a small bowl.

In a small saucepan, combine red wine vinegar, water and salt. Boil. Whisk egg mixture into this, stirring constantly until thickened. Remove from heat. Then whisk in butter and mayonnaise. Fold into salad. Chill and serve.
