AUNT MARION'S BAKED BEANS 
1 lb. yellow eye beans
1 tsp. ginger
2 tbsp. dry mustard
1/2 c. sugar
2 tsp. salt
1/4 lb. salt pork
3 tbsp. molasses

Sort and wash beans. Soak overnight in cold water. Simmer on top of stove (with 1 teaspoon baking soda) 15 to 30 minutes until can blow on a spoonful of beans and skin will split. Drain, rinse, bring to boil, add all ingredients, place in beanpot, bake at 325 degrees for 6 to 8 hours, add water as needed.
