OLD FASHIONED TEA CAKES | |
1 1/2 c. sugar 1 c. butter 2 eggs, beaten 6 tbsp. buttermilk 1 tsp. vanilla 3 1/2 - 4 c. flour (to make stiff dough) 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt Preheat oven to 350 degrees. Grease cookie sheets. Cream butter and sugar. Add eggs; mix. Add buttermilk and vanilla. Add dry ingredients. Start with 3 1/2 cups of flour. If dough is not stiff, add 1/2 cup flour. Roll out cookies, not too thin. Cut out 2" to 3" cookies, sprinkle with sugar. Bake 10 to 12 minutes until slightly browned. Do not over cook. Cool on cookie rack and store in a tight container. Freezes well. |
