MUSHROOM AND PAPRIKA SAUCE 
Fresh mushrooms
2 tbsp. butter
3 tbsp. shallots
1 tsp. paprika
2 tbsp. Arrowroot cornstarch
1/4 c. sherry
1 c. milk
1/2 c. heavy cream
1/3 tsp. cayenne pepper

Cut mushrooms into thin slices. Heat butter and shallots, paprika and mushrooms. Sprinkle Arrowroot and stir. Add milk, cream, salt and pepper. Heat over low heat.
