APPLESAUCE OATMEAL MUFFINS 
2 c. oatmeal
1 1/3 c. sour milk
1/3 c. sugar
1/4 c. vegetable oil
1 egg
1/2 c. applesauce
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Pour sour milk over oatmeal and allow to stand from 10 minutes to overnight. Combine sugar, oil, egg, and applesauce and add to oatmeal mixture. Sift dry ingredients together and blend in. Bake in greased muffin pans at 425 degrees for 20 minutes. Makes 18.
