APPLESAUCE MUFFINS 
1 c. all-purpose flour
1 1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. pumpkin pie spice
4 tbsp. butter, softened
1 tbsp. sugar mixed with 1/2 tsp. ground cinnamon
1/4 c. sugar
1 egg
1 c. applesauce
1 tsp. vanilla extract

Preheat oven to 400 degrees. In a small bowl, combine flour, baking powder, salt and pumpkin pie spice until blended.

In a medium bowl beat butter and sugar until creamy. Beat in egg, applesauce and vanilla until well blended. Stir into flour mixture.

Spoon batter into 24 lightly greased miniature muffin - pan cups. Sprinkle muffins with the sugar and cinnamon mixture. Bake for about 12 minutes or until a wooden pick inserted in the center comes out clean. Let cool in pan on a wire rack for 5 minutes, then remove from pan and finish cooling on a wire rack.
