ZUCCHINI CASSEROLE 
3 zucchini, sliced thin
1 tbsp. sweet pepper, chopped
3 potatoes, sliced thin
1 onion, chopped
1 c. corn
2 fresh tomatoes, chopped
1/2 stick butter
Salt and pepper to taste

Put all ingredients in a frying pan and cook until tender. Pour into a baking dish and top with cheese and cracker crumbs. Bake at 350 degrees until brown.

NOTE: Ground beef can be added to the casserole; brown before adding.
