4 c. chopped zucchini
1 box Jiffy corn muffin mix
1/2 tsp. salt
1 egg, beaten
1/4 c. chopped onion
1/4 tsp. pepper
1/2 c. shredded cheddar cheese

Mix together, add another 1/2 cup shredded cheddar on top and bake at 325 degrees for 45 minutes.
