BROILED FISH 
Fillet the fish you want to serve. Heat the oven on broil. Butter the pan used to cook in. Melt a little butter to brush on the fish. Place skin side down in the pan. Salt and pepper the fish and put it in the oven after brushing with the butter. Broil close to the element for about 15 minutes or until the fish is browned and done. Serve with French fries, salad or cole slaw and hot French bread.
