ZUCCHINI FRIES | |
1/2 c. flour 1 tsp. onion salt 1/2 tsp. oregano 1/4 tsp. garlic powder 1 egg, slightly beaten 1/3 c. milk 1 tbsp. olive oil 3 med. size zucchini 4 c. Corn Chex cereal, crushed to 1 c. In medium size bowl combine flour and seasonings. Add egg, milk and oil. Mix until smooth. Cut zucchini in half crosswise. Cut each half into 8 wedges to form "fries". Dip each into flour mixture. Drain off excess. Roll in cereal crumbs to coat all sides. (Crush more cereal if necessary.) Fry in hot oil (360 degrees) about 2 minutes or until golden. Drain on absorbent paper. Best served hot. Makes about 48. |
