SUPER POTATO CASSEROLE | |
6 potatoes, cooked 2 c. cheddar cheese 1/4 c. butter, melted 1/3 c. green onion, chopped 1 tsp. salt 1/4 tsp. pepper 2 c. sour cream, room temperature 2 tbsp. butter Peel cooked potatoes and coarsely shred them. Add cheese and melted butter; mix lightly. Add onion, salt, pepper and sour cream. Mix lightly. Dot with butter. Bake at 350 degrees for 25 minutes. Can be made the day before and baked the next day. Makes 8 servings. This is very good with a ham or turkey. Makes a lovely Holiday Buffet Dish. Be prepared to give out the recipe - I get many requests for this potato dish. |
