SWEET POTATO CRUNCH 
Time to prepare: 45 minutes. Cooking time: 30 minutes. Servings: 4. Oven temperature: 350 degrees.

3 c. mashed sweet potatoes
1 c. white sugar
1 stick butter
1 c. coconut (optional)
1 c. brown sugar
1/2 c. milk
1 tsp. vanilla
1/2 c. flour
1/2 stick melted butter
1 c. pecans

Mix potatoes, white sugar, one stick butter, coconut, milk, and vanilla. Pour into buttered casserole. Make topping by combining white flour, melted butter, brown sugar, and pecans. Mix together and place over casserole. Bake at 350 degrees for 30 minutes.
