SUPER HEALTHY POTATOES 
1 potato for each 2 guests
Fresh mushrooms
1/2 c. sour cream
Wheat germ
1 can kidney beans
Dash pepper

Bake large potatoes; halve and scoop out majority of potato. Sauce sliced mushrooms. Add scooped potato, sour cream, wheat germ (in amounts pleases you), kidney beans, dash of pepper. Restuff. Cover with wax paper and cook 30 seconds per potato in microwave. Just enough to reheat.

Since microwave ovens vary in power, you may need to adjust your cooking time.
