ZUCCHINI CASSEROLE 
1 1/2 lbs. sliced zucchini
1/2 lb. grated Cheddar cheese

Make mixture as follows:

Saute:

1/2 lg. onion, chopped
1 stalk celery, chopped
1 clove fresh garlic, minced
3/4 lb. chopped meat
1 tsp. parsley
1/4 tsp. oregano
1/4 tsp. basil
1 (16 oz.) can tomatoes
1/2 c. raw rice
Salt and pepper

Bring to simmer but do not cook. In buttered casserole layer 1/3 of the zucchini, 1/3 of the meat mixture, 1/3 of the cheese. Repeat and bake covered 1 hour at 350 degrees.
