GINGERED PANCAKES 
2 1/2 c. all purpose flour
1 tbsp. + 2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 c. molasses
2 c. milk
2 lg. eggs
6 tbsp. butter, melted
1 c. raisins

1. Put all the ingredients except raisins into a large bowl. Beat with an electric mixer until well blended. Stir in raisins.

2. Heat a griddle or skillet until drops of water flicked on the surface dance and sputter. Drop batter by 1/4 cupfuls onto lightly greased griddle. Cook until bubbles form on surface of pancakes or until brown.
