BEEF ENCHILADA CASSEROLE 
1 onion, chopped
2 tbsp. vegetable oil
2 lbs. beef, cut in sm. cubes (1/4 inch)
1/4 tsp. garlic powder
1/4 tsp. cumin
1 can (16 oz.) enchilada sauce
Salt and pepper, to taste
2 c. tortilla chips
1/2 - 1 c. shredded Cheddar cheese

Saute the onion in oil. Add beef and saute until the beef is slightly browned. Add the garlic powder and the cumin to the enchilada sauce and stir into the meat and onions. Simmer, cover, on low heat for 1 hour or until the beef is tender. Taste for seasoning. Add more garlic powder and/or salt and pepper to taste.

Place the meat sauce mixture in an oiled, rectangular casserole dish. Fold in the tortilla chips. Top with cheese and bake in a 325 degree oven for 20 minutes or until the casserole ingredients are bubbling. Serves 6-8.
