WICOMICO CURRIED OYSTERS 
1 pt. shucked Maryland oysters with liquor
1/4 c. (1/2 stick) butter
1 sm. onion, grated
1/2 med. apple, peeled and grated
2 tbsp. Major Grey chutney
1 tbsp. flour
1/2 tsp. curry powder
1/2 tsp. salt
Oyster liquor plus water to make 1/2 c. liquid
1/2 c. milk
4 c. hot cooked rice

Drain oysters, reserving liquor. In 10 to 12 inch skillet, melt butter. Stir in onion, apple, chutney, flour, curry powder and salt. Cook for 5 minutes over medium-low heat, stirring frequently. Add oyster liquid and milk; simmer 2 to 3 minutes. Add oysters and cook just until edges of oysters curl. Serve with hot cooked rice. Makes 4 servings.
