POUNDED GREEN PLANTAIN 
2 green plantain
oil for frying
salt
aluminum foil or brown paper bag

Choose green plantain that is firm but not hard, a little yellow is ok. cut into 1in. pieces, remove peel.

Place pieces in hot oil, fry until outside is slightly crisp. Do not over fry, approximately 1 minute per side.

Remove from oil, smash between paper bag (or foil) until flat, return to oil fry until crisp.
