YEAST PANCAKE OR WAFFLE 
1 1/2 c. buttermilk
3 eggs
1/4 c. oil
1 tsp. vanilla
2 c. flour
3 tbsp. sugar
1 pkg. dry yeast
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt

In a medium bowl, mix buttermilk, eggs, oil and vanilla until well blended. In a large mixer bowl, stir flour, sugar, yeast, baking powder, baking soda and salt. At low speed, gradually beat in buttermilk mixture until blended. At medium speed, beat for 2 minutes. Let stand at room temperature for 1 hour. Cover tightly and refrigerate overnight.

To cook pancakes or waffles, stir down the mixture. Bake on lightly greased hot griddle.
