BROCCOLI CORN BREAD 
1 box corn muffin mix
1/4 c. applesauce
1 c. egg replacement (equivalent to 4 eggs)
1/2 tsp. salt
1 tbsp. sugar (optional)
8 oz. non-fat cottage cheese
1 small onion, diced
1 (10 oz.) box frozen chopped broccoli

Preheat oven to 400°F. Thaw broccoli. Coat a 13 x 9 x 2 pan with cooking spray. Stir first three ingredients together and then add others, combining all items in a bowl. Place in baking dish and bake 20 to 25 minutes. (Store leftovers in refrigerator.)

Yield: 15 servings.
