CRANBERRY ORANGE MUFFINS 
2 cups flour
2 tsp. baking powder
1/3 cup oil
1 tsp. grated orange rind
1 cup coarsely chopped cranberries
3/4 cup sugar
1/2 tsp. salt
1 egg, slightly beaten
1/2 cup orange juice
1/2 cup chopped walnuts
non-stick spray

Preheat oven to 400°F. Spray 12 muffin tins with non-stick spray.

In a large bowl, combine flour, sugar, baking powder and salt. In a small bowl, combine oil, egg, orange juice and orange peel. Stir liquid into flour mixture just until moistened. Add cranberries.

Spoon into muffin pan and sprinkle muffin tops with chopped walnuts. Bake for 20 minutes or until golden brown.
