CHOCOLATE CHIP BRAN MUFFINS 
1 c. flour
1/3 c. brown sugar, packed
3/4 c. chocolate chips
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 egg, beaten
3/4 c. milk
3 tbsp. vegetable oil
1 c. bran cereal

Preheat oven to 400 degrees. Grease muffin pans. In medium bowl, combine flour, brown sugar, chocolate chips, baking powder, salt and baking soda. In small bowl, blend together egg, milk and oil; stir in bran cereal. Let stand for 5 minutes. Add to flour mixture; mix just until blended. Do not over mix. Fill muffin cups 2/3 full. Bake for 20 to 25 minutes or until toothpick comes out clean. Remove from pan to wire rack to cool. Makes 12 to 15 muffins.
