COTTAGE CHEESE CASSEROLE 
2 c. sm. curd cottage cheese (use lowfat)
3 whole eggs (use egg beaters)
3 tbsp. flour
1/2 tsp. salt (use low salt sub.)
1/4 lb. Cheddar cheese (low fat Cheddar)
1/2 pkg. frozen (5 oz.) spinach or other green vegetables (I use broccoli)

Cut Cheddar cheese in 1/2 inch squares. Mix all ingredients together and place in 8 x 8 inch pan. Cut spinach in 1/2 inch chunks and press into mixture. Bake uncovered for 1 hour at 350 degrees. Serves 3 hungry adults. This is excellent prepared ahead and refrigerated until ready to bake. This can be doubled easily and baked in a larger pan or serving dish. This recipe used at holidays at the Sawyers.
