STUFFED PORK CHOPS 
4 pork chops, 1 1/2" thick
1 c. prepared stuffing mix
1/4 c. water or milk (or 1 egg)
2 tbsp. butter
1/4 c. chopped onion
2 tbsp. chopped celery
Salt & pepper to taste
1/2 c. milk

Saute onions and celery in butter until tender. Moisten stuffing mix with 1/4 cup water, milk (or egg if preferred). Combine all ingredients, mixing well and stuff into pockets cut in chops. Brown chops in shortening. Add 1/2 cup milk. Cover tightly and bake at 325 degrees for 1 hour. Yield 4 servings.
